So, you are going camping and are looking for inspiration in the form of camping food ideas for your upcoming trip. One idea for bringing food camping is to make sure that you prepare as much of the food before you go. Make use of Ziploc storage bags. they will keep things fresher for longer, weigh and measure out dry ingredients, and portion them out into bags also. To help you decide on your meal planning I have put together two great tasting recipes to help you:
recipe 1
Foil baked Chicken
Ingredients ( feeds 4)
4 x Chicken breasts
2 x Large cloves of garlic
1 x Red pepper
2 x Carrots
1 x Courgettes/zucchini
Handful of asparagus spears
1x Lemon
Splash of white wine (optional)
olive oil
Dried or fresh herbs, such as rosemary, Oregano, and Basil.
Salt
Black pepper
Utensils needed
Aluminium foil
knife
potato peeler
Method
Take the 4 chicken breasts and slice them through the middle, so you have two 8 thin halves (this way they will cook quicker).
Get 8 reasonably large squares of aluminium foil and place on a table, lay the chicken breast in the center of the foil squares and sprinkle with a little salt and pepper.
Now to prepare the veg: De-seed and finely slice the pepper, peel the carrots, courgettes and prepare asparagus spears, peel and finely slice the garlic.
Once this is done, continue to use the vegetable peeler and peel slices of courgette and carrot.
What you are looking for is thin ribbons of vegetable that will cook quickly.Place vegetables and sliced garlic on top of the chicken, and drizzle with olive oil (and white wine if you have it).
Finally, season with herbs lemon juice, and some more salt and pepper.
Wrap the foil over to form an envelope or parcel.
Not too tightly because you want the chicken to steam. Once this is done put the parcels in the embers of the fire or on a rack over a grill for approx 20 minutes.When cooked unwrap and serve.
This is a great meal because you can eat right out of the foil, all your veggies and meat are in one dish, and there is next to no washing up.
Recipe 2
Black Bean Chili With Lime And Coriander
Ingredients (Feeds 6-8)
1kg(2.2lbs) of Chuck or Braising Steak
3-4 Small red Birds eye Chilies
250g(7.5 oz) Dried Black Beans (soaked overnight)
2x Onions chopped
2/3 large cloves of garlic (depending on your taste)
2 x Limes
1 Large Handful Fresh Coriander
2 x 14oz Cans of Tomatoes (chopped or whole)
Salt and Pepper
Olive Oil
Water
Beef Stock cube
Utensils needed
Large Pot or Dutch Oven
Tin Opener
Knife
Wooden spoon for stirring
Chopping board
Peeler or zester
Method
Take the Beef and cut up into small pieces, the smaller the better. Fry these in a pan to brown with a little olive oil. when done, drain and remove.
Meanwhile de-seed and chop the chilies, and crush or finely chop the garlic, separate the coriander leaves from the storks and chop up the storks. Peel or zest the 2 limes ( we will use the juice later!) add these ingredients together with the chopped onions to the pan in which the meat was browned and cook until soft. Drain the black beans and add, together with the meat and the tinned tomatoes finally add 1 pint of water and crumble in a stock cube. Put the lid on your pot or dutch oven and cook slowly on a low heat for 1.5 - 2 hours. Add more water through the cooking process if necessary. Just before serving add the juice from the 2 limes and the fresh coriander and serve with plain boiled rice or nachos.
Again an easy "all in one" pot meal that requires next to no washing up and is good for easy camping food for a crowd. For more people just add more ingredients.
